The Maillard Reaction
The brown crust that makes steak extraordinary is the Maillard reaction: amino acids and reducing sugars undergoing complex chemical transformations above 140°C/285°F. To maximize it, the surface of the steak must be as dry as possible. Salting 45 minutes or more ahead dramatically improves crust.
The Reverse Sear Method
Start the steak in a low oven (around 120°C/250°F) until the internal temperature is about 10 degrees below your target doneness, then sear in the hottest possible pan for 60–90 seconds per side. The result: more even internal temperature, better crust, and no resting time needed.
The Resting Myth, Partially Debunked
Resting redistributes juices — true. But the conventional 10 minutes is often too long for thin steaks. Thick steaks benefit from 5–7 minutes. Steaks cooked via reverse sear need no resting.
The best steak isn't about the most expensive cut. It's about understanding the physics of heat transfer and the chemistry of browning.
